Polish Sausage
Is there more than one kind of head cheese? Chester Mikolajczyk, a Polish-American sausagemaker in Chicago, finds this a foolish question.

He makes about 80 different kinds of headcheese.

If there is ANY reason on the planet earth not to eat pork, headcheese has got to be the first on the list. Sorry. *clinching teeth*

I think I want to puke now. I'm so glad I don't eat meat. What the hell is headcheese?

That, my dear, is head cheese. I have to say, though, that the picture makes me want to laugh a little more than it makes me want to puke. . . :-)

But it doen't look like cheese at all. Is it brains? No, it makes me laugh, too, but validates my decision to avoid the meat.

Random parts that are too distinct to become fine-grained sausage, often gellied in aspic.

Mmmmmmm. Delish!

You're description of having to leave the show brought tears to my sick and therefore overly sensitive soul.

Is it like haggis?

Posting that was a little intense for me, especially considering some of the over the top responses that I just made it private for me. Truly, last night was the worst I've felt...since I don't know when. And I'm tired of being sad and I'm ashamed of feeling lonely. But so it goes. Last night was bad. But the only good thing about hitting rock bottom is you know you have no where to go but up. I guess. Or something. .

Bottom is along way down. But I hope you're coming back to the surface. Spend more time with the people who treat you with respect and who care that you're having such a hard time. Wait. Think.
